Full disclaimer I have never eaten JERKY. In Wyoming it apparently the state’s favorite treat or snack.

JERKY is lean trimmed meat that has been cut into strips and dried (dehydrated) to prevent spoilage. While the rest of the country has to deal with the vacuum sealed and “mechanically separated” meats Wyoming offers fresh jerky. It is apparently available all across the state at roadside stands and local smokehouses.

To complete the dehydration process you either use an oven, some type of dehydrator, or smoke the meat.
