One of the cutest things I have seen my granddaughter Bryleigh Paige Revels engaged in was singing “Do You Know The MUFFIN Man” while she was playing at our house before COVID-19 denied me being around her.

She has heard the MUFFIN Man Song countless times on her favorite TV show – Coco Melon. If you don’t have small children or grandchildren here is the song.

Do You Know the Muffin Man

So in order to please my granddaughter I am using Strawberry MUFFINS for my second cooking adventure in my 30 Day April Baking Challenge. I planned on posting this a few days ago but Jeff Neelon and Tina Bullard got in a baking frenzy and grabbed all the headlines.

I am grateful to Sarah Griffin Green for this recipe. I have included Sarah’s below.

Strawberry MUFFINS
1/4 cup oil
1/2 cup milk
1 egg
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
1 3/4 cup flour
1 cup strawberries, chopped

Heat oven to 375. Oil muffin tin or use paper cups.

In a small bowl, combine oil, milk and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder, and sugar. Toss in chopped strawberries and stir to coat with flour.

Pour in milk mixture and stir together.

Fill muffin cups.

Bake for 25 minutes or until tops bounce back when touched. Cool 10 minutes and then remove from pan.

Makes 7 MUFFINS and in my case one of them is going to Bryleigh. Here she is halfway thru sampling my Strawberry MUFFIN which I gave her on Sunday.

I am happy that Bryleigh knows who the MUFFIN man really is. I consider it quite an honor that my little MUFFIN of a granddaughter liked my strawberry treat.
