Last week my wife and I completed our 3rd food item as part of the Coach4aday30 Day Ethnic Dinner Challenge. We prepared IRISH Soda Bread for a St. Patrick’s Day Celebration at a friend’s home.

The Ethnic Food Challenge asks that you prepare four (4) different dishes or menus from a different part of the world. We had previously prepared a Thai Themed and CARIBBEAN menu this month. For Challenge #3 we just contributed one food item to a friend’s Irish Celebration which was held on St. Patrick’s Day. Her menu included corn beef sandwiches washed down with either a Guinness Stout or Smithwick Ale. We provided the IRISH Soda Bread to be one of the dessert offerings.

There are many recipes for preparing IRISH Soda Bread and all of them include at least 4 ingredients, flour, salt, baking soda and buttermilk.

We found our recipe online and here is a link to it called Mom’s IRISH Soda Bread

We did deviate a little with our recipe by soaking the raisins in “wee bit” of Irish Whiskey before they got a bath in buttermilk.

We had a great time celebrating the IRISH and glad we got to contribute an Ethnic Food to the event.
